There is nothing like guilt free “yumminess” and my dinner was just that! It is packed with flavours and so satisfying. The perfect comfort food after a busy day!
Whats more, it was very quick and simple to put together:
I removed the seeds from the squash, brushed it with olive oil (outside and inside) and put it in a hot oven for 30 minutes. While this is roasting, I cooked 50g of quinoa.
Once the quinoa was cooked, I stirred in a tablespoon of the vegan pesto then stuffed the roasted squash with it.
Et voilà, délicieux!
